«One Village One Product» (OVOP) Project held seminars performed by Japanese expert Mr. Hayakawa Yoshiichi who has an experience more than 40 years in Naryn, Talas, and Bishkek. Seminar was about basic knowledge of food safety and hygiene, which are the most important factors for food production and principles of the 5S management system. 5S Japanese method helps a workplace remove items that are no longer needed (sort), organize the items to optimize efficiency and flow (straighten), clean the area in order to identify problems more easily (shine), implement color coding and labels to stay consistent with other areas (standardize) and develop behaviors that keep the workplace organized over the long term (sustain).In spite of its simplicity, following these rules is the most important part in obtaining HACCP certification.
